Pizza Anyone?

So I know this sounds like a very odd combination for a pizza but one of my new favorite meals have been unusual pizzas.  They are great for using up leftovers and I'm quickly finding that you really can put just about anything onto a pizza crust, call it dinner, and have it turn out pretty well!!  This revelation came months ago after I made an egg and asparagus pizza, yeah talk about skeptical!  Turns out that was actually really good and from then on I was hooked.  I have since made the BBQ Chicken Pizza, a white pizza, pizza with zucchinis and my latest creation:

Black Bean, Spinach and Onion Pizza

I was inspired by this recipe but kinda made it up as I went along.  I am quite famous for never following recipes (which is also why it's hard to post recipes since I don't measure anything).  Made with just a few simple ingredients your likely to already have on hand and you can have a delicious dinner in no time.

Ingredients:

prepared pizza dough (or crust)
1/3 of a onion
1 can black beans
fresh spinach
cheddar or colby/jack cheese
1 tsp garlic powder
1/2 tsp cumin
2 tsp chili powder
dash of cheyenne (to taste- add more if you like heat)

Directions:

Preheat oven to 350°.  If you have a prepared crust you can skip this part.  Spread out your pizza dough on a lightly greased surface. Bake for 7 mins, you don't need it completely cooked but you don't want it to turn out soggy once your toppings are applied.

While thats cooking rinse and drains the beans.  Place the beans, onion (cut up a bit if needed), garlic, cumin, chili powder and cheyenne into a food processor and blend until a paste is formed.  It doesn't need to be smooth, chunky is perfectly fine.  Also take chop up your spinach.

Take your crust out of the oven and spread the black bean paste on top like pizza sauce.  Next spread your chopped spinach on top and finally add your cheese.

Bake in the oven for about 10 mins, you'll have to keep an eye on it and check to make sure the bottom is fully cooked.  Having the paste on it makes it take a little longer to cook.  Just make sure it's done or it will be doughy and that doesn't taste very good.

ENJOY!!

PS - I have also added a recipes tab and a tab for Tuesdays tips to the top of the blog for easier navigation!

  1. OK, my hubs wouldn't go near that pizza with a 10 foot pole, but I may reserve it for when he's out of town! Looks yummy to me!

PS - I know Lexi is out of town, but I posted a Free Your Mind Friday on my blog, The Maxwell's Madness! and I'll link you up if you want to do one this week too.
