If you know me you know that I just had to buy some because that is quite cheap, usually a "good" price is $1 a piece! I picked up four having no idea what I would do with them but I knew I could fine something.
Well so far we have eaten one and 2 are going to be pureed and frozen to use for smoothies or mango margaritas. What did I do with the 4th you ask?
Mango Salsa
And I have the recipe for you!
Ingredients:
1 mango
6 roma tomatoes
1 red onion
1 bunch cilantro
1/4 cup lime juice
salt to taste
*if you like things spicy throw in some cayenne pepper or dice up a chile or jalepeño pepper*
Directions:
Dice up your mango, tomatoes and onion into small cubes. Throw in a bowl. Chop up the cilantro and throw into the bowl. Add 1/4 cup of lime juice and mix well. Salt to your tastes and let it sit covered in the refrigerator for at least 1 hour. I prefer it when it has sat overnight since all the flavors have a chance to blend together.
This is great used as a topping on fish or chicken, wonderful mixed into a salad or of course eaten the good old fashion way with some delicious tortilla chips! If your like me you could also just dig right it!!
