I made some mango jam today since they were on sale last week at Whole Foods for quite a reasonable price. Helping this was the fact that a friend of mine had requested mango a while ago. If I do say so myself it is fabulous! Even better, I have the recipe for you!!
Mango Jam: yields 6-8 ounce jars
6 ripe mangos
1 package Sure Jell (or other brand of pectin)
2 lemons (or 1/3 cup lemon juice)
1 1/4 cup water
2 cups sugar
1 cup Splenda
** you can use all sugar or all Splenda if you prefer, I imagine you could also reduce down to 2 cups**
- Wash, peel and cut up the mangos. Cut into smaller cubes to speed up cooking.
- Peel or grate the lemon rind and then juice the lemons into the pot.
- Add the diced mangos and water.
- Simmer until mangos are cooked and soft.
- Mash up or blend the mixture. I like mine smoother but do it how your family prefers.
- Add the pectin and then bring the fruit up to a boil. Boil 5 mins.
- Adjust heat to bring mixture up to a full rolling boil that does not stop while stirring.
- Add your sugar while stirring and boil another 3 mins.
- Check your jam for firmness with a cool spoon.
- Turn off heat and ladle into sterilized jars. Process in a water bath for 10 mins.
- Take out of water bath and allow to cool overnight undisturbed.
- ENJOY!!
I will definitely have to try this, my family loves all things mango! Did you use the regular pectin or the no sugar added?
ReplyDeleteI always use the no sugar added! That way I can put in however much sugar I want.
ReplyDeleteWanted to let you know that I made some Mango jam today and it is darn good. I find that I tend to use less Pectin then you (I guess I like it runnier) and less sugar. Great recipe!
ReplyDeletePerhaps so, I know Brian likes his jam firm so I make it that way. The set on mine is perfect (for us) so perhaps you do like softer set jelly. I think next time I will use less sugar, I was kinda freaked after the one batch didn't set even though I know it had nothing to do with the recipe since the jar in the fridge was perfect. These were champagne mangos too and were a bit tart which is also why I went with more but my standard is pretty much 2 cups. I am so glad you tried it and were successful. I know ours turned out mighty tasty!! Glad yours did too!!!!
