Better for You Banana Bread

So at the grocery store the other day I noticed these brown paper bags sitting with the bananas and was curious.  I peeked inside and saw kinda sad looking bananas, then I noticed the price: 19 cents a pound!  Well for that price I could find something to make with these bruised bananas.  Of course the first thing that popped into my head was banana bread.  I don't like bananas but love banana bread.  I wanted to make a loaf that I wouldn't feel bad for eating however, so I took a basic recipe and tweaked it to make a better for you version.  Here's what I came up with:

Ingredients:

5 bananas mashed
1/4 cup skim milk
1/4 plain lowfat yogurt (can also use sour cream or probably applesauce)
1 egg (can use egg beaters or egg white instead also)
2 cups whole wheat flour
1/2 cup flax meal
1 teaspoon baking soda
1/2 teaspoon salt
** I didn't use any sugar and thought it tasted fine (quite delicious actually) however you could add 1/2 cup sugar**

Directions:

Mash bananas in large bowl.  Add the milk, yogurt and eggs to the bananas.  Mix well.  Add the dry ingredients to the wet and mix together.  Bake at 350 degrees for about 45 mins.  Cooking times may vary a bit so just check on it at the end and cook more or less if needed.

Below you can see a picture of my highly paid assistant!  Isn't he the cutest?  He loved mashing the bananas up.  He told me "This is really hard.  I can do it, I'll just use my strong muscles!".  This kid cracks me up.

See proof that a potato masher is not just for mashing potatoes anymore!  What do you think inspired that post?
