I know, I had pretty much stopped doing these but not because I didn't like them. I kinda ran out of tips! Last night, however, I had a sheer moment of brilliance!
You see, somewhere in our lifetime together I had missed the memo that the DH doesn't like crab. He will tear up some crab dip and I have seen him eat crab cakes on a few occasions so I assumed he like them. Well, this is exactly the reason I try not to assume things.
I made a pot of absolutely delicious (and ridiculously simple) Maryland crab soup! It was great, except for the fact that no one ate it but myself. I had an idea to freeze the soup into lunch size portions. Then I could pull it out, heat and eat. So here is my first tip for you guys, freeze things in ziploc bags instead of tupperware. It takes up a lot less room in the freezer. Another tip, freeze the portions in regular baggies and then put those baggies into a freezer bag. Freezer bags are so expensive. This way you only need to use one and it stays clean so you can use it again and again.
Now, my brilliant idea came when I was trying to ladle the soup into a ziploc bag, as you can imagine it was a bit tricky! My solution was this:
Put the ziploc in a cup and fold the edge around the rim! It holds it in place and holds the bag open all at the same time!! Now more bag collapsing and soup all over your counter. I now have 5 lunch sized portions of homemade crab soup. All I have to do is heat and eat!
Tomorrow I'll post the recipe for this soup, seriously it doesn't get any easier!
Sometimes the simplest tricks are the best.
