I had a bunch of blueberries in the fridge that I knew weren't going to last too much longer so I decided to make some muffins with them. Turns out I didn't have the appropriate pans so instead I decided to use a loaf pan and make bread. This is an easy recipe and very tasty. Sorry I have no picture, it was gobbled up too quickly!
Ingredients:
2 cups flour
1/2 cup quick cook oats
*1/2 cup sugar
4 tbs flax meal
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup applesauch
1/2 cup non-fat plain yogurt
1/4 cup skim milk
2 eggs
1 tsp vanilla extract
1/2 cup blueberries
a dash of cinnamon and nutmeg (optional)
*For the sugar adjust to you tastes and add the amount you would typically add for a muffin recipe. I would say anywhere from 1/2 to 1 cup would be fine depending on your preferences. You could also easily substitute natural sweeteners or even artificial sweeteners.
Directions:
Preheat your oven to 350°. Place the first 6 ingredients (the dry ingredients) into a large bowl. Mix together to incorporate. Next add the remaining ingredients (the wet ingredients) EXCEPT the blueberries. Mix everything well until you have a nice batter. The batter will be pretty thick but it should be fairly smooth. Last add the blueberries and mix just enough to incorporate them, you don't want to smoosh up your blueberries by mixing too much. Pour batter into a greased loaf pan and cook for about 50 mins. I would check at 40 mins and see whether you need to cook longer. Mine took about an hour to finish so just keep an eye on it at the end. For the muffins I would guess it would take about 25-30 minutes but am not sure since I didn't make muffins. Again just keep an eye on them. Let them cool a bit and ENJOY!
