So last night I came up with a meal that was very delicious and also thought of a way to make a very simple version and turn it into baby food. All while doing no extra work!
Pasta with Tomato and Zucchini
Basic Ingredients (for both):
4 small zucchini or 3 larger
2 cans of diced tomato - no salt added
minced garlic
1 onion
garlic powder
onion powder
oregano
pasta - your choice
*First I will give directions for the main meal and then baby's meal*
Dinner:
2 small zucchinis diced - I left the skins on
1 onion diced
1 can of diced tomatos
2 tbs minced garlic
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp oregano
**for the spices these are only rough estimates since I didn't measure them, please flavor to tastes**
In a large skillet put about 1 tbs olive oil in pan and add the minced garlic, onion and zucchini. Let them saute on medium until the onion is translucent and the zucchini is starting to turn around the edges. Next add the can of diced tomatoes including the juice. Add your spices, stir and let it simmer for about 10 mins. Boil some water and cook your pasta. Top with "sauce" and enjoy!
I was actually quite surprised at how delicious this really is (and secretly proud of myself) because the ingredients are so simple.
Now if you have a baby then here's how you can easily make baby food while cooking dinner.
Baby Food
2 small zucchini - peeled and diced
1 can of diced tomatoes
1 tsp minced garlic
1 tsp oregano
2 cups dried pasta
In a separate smaller pan or pot place the minced garlic and the zucchini and let saute about 10 mins. Add the diced tomatoes and remaining spices and let saute another 10-15 mins. It's done when the zucchini are soft. Boil water and cook the 2 cups of pasta until well done. You could also cook all pasta at the same time and just pull out some for baby. Place all ingredients in food processor/mill or blender and puree until smooth. You could also leave chunkier for older babies.
If you do make these at the same time just set baby's ingredients to the side while you eat dinner. After dinner come back and blend it then and then clean up! I made some for my DD and it smells divine, much better than any jar that you buy!! Not only does this save money but it gets baby accustomed to the foods the family are eating.
